Will it fit standard drinks cans?

Yes, the bins are sized for standard drinks cans, so soft drinks, beer and sparkling water all load and roll the same way.

Do the oldest cans come out first?

They do. Because you load at the top and take from the bottom, stock naturally rotates without you having to think about it.

Is there any assembly?

None beyond stacking the tiers if you choose the two tier version. Nothing to screw, nothing to fix in place, and it is in use straight out of the box.
